Details Introduction
Governor Li Hongzhang of Zhili paid great attention to diet and emphasized nutrition. The official kitchen of the Zhili Governor's Office sourced tofu from Dongbailou in Baoding and used traditional cooking methods to prepare a tofu dish. After tasting it, Li Hongzhang felt that the tofu lacked aroma and had a slight deficiency in freshness. Therefore, the official kitchen added ingredients such as shrimp roe and dried scallops to enhance the flavor and re-cooked it. The dish had a light red color and a fresh, salty, and rich taste. When presented to the governor, Li Hongzhang was very satisfied. From then on, he often served this dish at banquets, and later generations named it 'Governor Tofu'.
